Tator Tot Casserole

  • Ingredients
    • 1 1/2 pounds lean ground beef or ground turkey
    • 1 can corn or green beans, drained
    • 3/4 C low fat sour cream
    • 1 can low fat cream of mushroom soup
    • 3/4 C skim milk
    • 1 tsp salt
    • 1/2 tsp black pepper
    • 1 tsp garlic powder
    • 1/2 tsp onion powder
    • 3/4 C shredded cheddar cheese
    • 2 lb bag tater tots
    Instructions
    1. 1. Preheat oven to 375 degrees and lightly spray a 9x13 pan with nonstick spray.
    2. 2. Heat a large skillet on high and add your ground beef or turkey. Season with the salt, pepper, garlic and onion powder. Cook on high, breaking it up into pieces as you go until the meat is completely cooked.
    3. 3. Turn off the heat and add the sour cream, soup, milk and corn or green beans. Mix until combined and then pour it into the 9x13 pan. Top with the shredded cheese then add the tater tots to the top. Bake for 40-45 minutes until hot and bubbly. Sprinkle a bit of salt over the tater tots when you take the casserole out of the oven.
    4. **For a freezer meal, prepare as instructed but do not bake. Freeze, well wrapped. To cook it, bake at 350 for 50 minutes if frozen, or as instructed if thawed.


Chicken Enchiladas

  • 2 cups chicken
  • 10-12 flour tortillas
  • 2 cups cheese
  • enchilada sauce 14 oz can – any flavor, we love the red and green sauce
  • optional: 1 cup sour cream
  • optional: diced green chiles
Cook at 350 for 15-20 minutes 

Label: Chicken Enchiladas.  Bake at 350 for 15-20 min.  5/12/16

El Dorado Casserole

1 1/2 lb. ground turkey or beef
1 T. minced onion
1/2 t. garlic salt
2 8-oz. cans tomato sauce
1/2 c. sliced olives
1 c. sour cream
1 c. cottage cheese
1 small can diced green chiles
1 small bag tortilla chips
2 c. grated Jack cheese

Brown meat, onion and salt; add tomato sauce and olives.  Simmer.
Combine sour cream, cottage cheese and chiles.
Place some crushed tortilla chips in bottom of 9"x13" pan.  Place meat mixture on top, then layer sour cream mixture.  Top with jack cheese and sprinkle more crushed chips on top.
Bake @ 350 for 30 min.

Slow Cooker Baby Back Ribs

  • 3 pounds baby back ribs, trimmed
  • salt and ground black pepper, to taste
  • 1/2 cup water

  • 1/2 onion, sliced
  • 1 clove garlic, minced
  • 1 (18 ounce) bottle barbeque sauce

Directions


  1. Season ribs with salt and pepper.
  2. Pour water into slow cooker. Layer the ribs into the slow cooker. Top the ribs with onion and garlic.
  3. Cook on High for 4 hours (or Low for 8 hours).
  4. Preheat oven to 375 degrees F (190 degrees C).
  5. Transfer ribs to a baking sheet. Discard onion and garlic. Coat ribs with barbeque sauce.
  6. Bake in preheated oven until the sauce caramelizes and sticks to the meat, 10 to 15 minutes.

Honey Pork Chops and Apples


                               
Ingredients:
2 large granny smith apples, sliced
1/2 cup honey (from your pantry)
2 Tbsp cinnamon
Directions:
Place apple slices in bottom of the crockpot. Drizzle half (1/4 cup) of the honey over the apple slices. Place pork chops on top of apple slices. Sprinkle cinnamon over everything. Place remaining apple slices on top and drizzle the remaining honey over everything. Cook on low for 6 - 8 hours.

Chicken Spaghetti

  • 1/2 cup diced yellow onion
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 1 small can mild diced green chiles
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • salt & pepper, to taste
  • 2 chicken breasts {about 1 lb.}
  • 1 can cream of mushroom soup
  • 3/4-1 lb. cooked spaghetti
  • 3 cups grated cheddar cheese
  • a few splashes chicken stock {optional}
  1. **Freezer directions: Place onion, bell peppers, green chiles, cumin, garlic powder, salt, pepper, chicken, mushroom soup and 1 cup of grated cheese together in a large plastic freezer bag. Seal and freeze. To cook, defrost in fridge, place in crockpot, shread chicken and add cooked spaghetti noodles and remanding cheese
  2.   label instruction:  place all ingredients except extra cheese and noodles in a crock pot.   Cook on low for 3-6 hours.  Shred chicken, add remanding cheese and cooked spaghetti noodles for 20-30 min

BBQ Cranberry Chicken

From Six Sisters Stuff

2 lbs chicken breasts
1/4 c dried minced onion
1 (16 oz) can whole cranberry sauce
1 cup barbecue sauce

Directions: Thaw in fridge for 24 hours. Cook on high for 3-4 hours or low for 6-7 hours.

*Side dish serving suggestion(s): Mashed or baked potatoes, stuffing, or rice.

Honey Mustard Chicken Sandwiches

Chicken:
4 boneless, skinless chicken breasts
1/4 cup whole grain or dijon mustard
3 Tbsp honey
2 Tbsp soy sauce
1/2 cup chicken broth
1/4 tsp garlic powder
Freshly ground black pepper and salt to taste

Red Cabbage Slaw:
2 cups red cabbage, shredded
1/4 cup olive oil
3 Tbsp apple cider vinegar
Pinch of salt & pepper
1 tsp whole grain or dijon mustard
2 tsp honey
2 tsp sugar

Mix all ingredients. Refrigerate at least 1 hour-overnight for best results.


**Label:
Thaw chicken overnight. Put chicken and sauce mix in crock pot and cook on high for 4 hours or low for 8 hours. Shred chicken and serve on buns with optional coleslaw (recipe on blog).

BBQ Chicken Pizza

Almost-Famous Barbecue Chicken Pizza

Ingredients:
olive oil
prepared pizza dough
1/3 cup BBQ sauce
8oz cooked chicken
2/3 cup mozzarella cheese
1/2 small red onion, thinly sliced
1 tomato, chopped
Fresh Cilantro, for topping

Label: (need 12)
Thaw pizza dough. Shape into two 12 inch round pizzas. Lightly brush the dough with olive oil. Sprinkle cornmeal on the bottom of the crust (optional). Place these in the oven (375) for 5 min before adding toppings.

Thaw BBQ sauce, chicken & cheese. Take pizzas out of oven and spread the BBQ sauce, leaving  3/4 inch border. Top with cheese, chicken & red onion. Add fresh tomato. Bake the pizza until cheese melts and the crust is golden, 20-25 min. Sprinkle with cilantro. Cut slices and enjoy!

ingredients for 12 pizza's
12 pizza dough from sam's flu
4 bottles (2 packs) Ray's BBQ sauce from Costco
2 big bags of Mozzarella cheese from Costco
2 Gouda cheese from Costco
2.5 pkgs of boneless/skinless chicken breast from Costco, grill
3 onions


Grilled Kielbasa and Pesto Penne

Ingredients:
  • 1 lb Penne Pasta
  • 1 lb cooked Kielbasa
  • 1/2 cup Pesto sauce
  • 1 tablespoon dried basil
  • Dash of dried Oregano
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
Directions:
  1. Preheat the grill or griddle on medium heat.
  2. Cook the pasta according to the directions on the box. Be sure to season the boiling water with salt before adding in the pasta.
  3. Keep the Kielbasa whole if using an outdoor grill. Cut the Kielbasa into 1/2 inch slices if you're using a stovetop griddle. Grill the Kielbasa until slightly browned and marked with grill marks. 
  4. Return the drained pasta to the pot. Toss in the Kielbasa (if you keep the Kielbasa whole, be sure to cut it into slices before adding it to the pasta), Pesto sauce, dried basil, dried Oregano, and garlic powder. 
  5. Toss together the ingredients. 
  6. Season with salt and pepper to taste.
  7. Serve warm.
Label (24) Grilled Kielbasa & Pesto Penne  Cook pasta & grill or brown sausage.  Add sausage, pasta & bag of sauce toss & serve. Can garnish with cheese if desired.  5/12/16

Hawaiian BBQ Feast

Marinade and Meat
Boneless skinless chicken thighs
1C. light brown sugar
1C. soy sauce
4-5 garlic cloves chopped
1-1/2 T fresh ginger root chopped
1/4-1/2 large onion sliced
1 stick of butter
4-5 green onions sliced small

In a bowl mix the brown sugar and soy sauce together, keep mixing until suer is dissolved.
Add the garlic, onion and ginger

Grilling Directions:
Place pyrex on the hot grill (if you have room, otherwise use your oven)
Add butter to the pyrex until it melts
Once your meat is grilled put in pyrex and top with green onions.
