Zesty Lime Tacos

4 chicken breasts
1 can mild green chilies
Kraft Zesty Lime Vinaigrette
1 can of salsa verde
Salt and peper to taste

Add all to crockpot and cook on low for 4-6 hours
Top with cilantro, salsa, avacado

Label:(24)  Add all to the crock pot and cook on low for 4-6 hours.  Lightly fry corn tortillas. shred chicken. Add chicken to the tortillas and top with cilantro, salsa and avacado

Boneless BBQ Country Style Ribs

No-Cook Boneless BBQ Country Style Ribs {slow cooker freezer meal}

Ingredients
  • 3lbs Boneless Country Style Ribs
  • 1/2 Onion (chopped)
  • 3 cloves garlic (minced)
  • 1/4 cup brown sugar
  • 1/2 cup apple sauce
  • 1 1/12 cups BBQ sauce
  • Salt and pepper to taste
Instructions
  1. Add salt and pepper to ribs
  2. Mix all ingredients in large, gallon size bag
  3. Freeze
  4. To cook: thaw, add to slow cooker
  5. cook on low for 5-6 hours
  6. Serve with rice

Crock Pot Chicken Taco Chili

INGREDIENTS:

  • 1 small onion, chopped
  • 1 (15.5 oz) can black beans, drained
  • 1 (15.5 oz) can kidney beans, drained
  • 1 (8 oz) can tomato sauce
  • 10 oz package frozen corn kernels
  • 2 (10 oz) cans diced tomatoes w/chilies
  • 4 oz can chopped green chili peppers, chopped
  • 1 packet reduced sodium taco seasoning
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 24 oz (3) boneless skinless chicken breasts
  • 1/4 cup chopped fresh cilantro

LABEL (24): Thaw chicken. Combine all ingredients in a slow cooker and mix well.
  1. Completely cover chicken and cook on LOW for 8-10 hours or on HIGH for 4-6 hours.
  2. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir.

Honey Dijon Pork Chops

1/2 c. honey dijon mustard
2 T. Worcestershire sauce
4-6 boneless pork chops
1 c. Italian breadcrumbs

Label (2):  Thaw pork chops & mustard/Worcestershire sauce mixture.  Make sure each pork chop is covered with the sauce.  Coat each pork chop with breadcrumbs.  Broil each side on low for 10-15 minutes or until cooked through.

Tortellini Bake

1 bag of frozen cheese filled tortellini (19 or 20 oz) 
1 jar of alfredo sauce (15 oz)  
1/2 jar of marinara sauce 
1/2 cup shredded mozzarella  
1/2 cup grated Parmesan cheese  


Preheat the oven to 350. Cook the tortellini according to package directions. Mix with the alfredo and marinara sauce in an 8x8 baking dish. Top with mozzarella and parmesean. Bake for fifteen minutes Then broil for five minutes to get a nice bubbly and golden topping. Serve immediately.


Label (24) Tortellini Bake - Cook the tortellini according to package, mix in bag with sauces. Place in 8x8 dish and top with cheese. Bake 15 mins at 350 and then broil 5 mins.

Hearty Beef Stew--Crock Pot to Freezer

1 lb stew meat, cubed
1 small-medium white onion, chopped
2 - 3 celery stalks, chopped
8 baby red potatoes, cubed
4 medium carrots, chopped
1 cup frozen peas
1 (14.5 oz) can diced tomatoes, undrained

Beef Stew Sauce:
1 (8 oz) can tomato sauce
1 (6 oz) can tomato paste
1 clove garlic, minced
1 tsp garlic and herb seasoning
1/8 tsp pepper
1 Tbsp beef bullion
2 tsp Worcestershire sauce

Directions: Chop up all vegetables and add freezer bag. Next add meat. Finally add the diced tomatoes. In a bowl, add all the sauce ingredients and stir together. Add to freezer bag. Place in freezer for up to two months. To cook: Thaw meal in fridge over night. Place in crock pot with 1 - 2 cups water. Cook on low 6 - 8 hours or on high 3 - 4 hours.

Label:  Add 1 - 2 cups water. Cook on low 6 - 8 hours or on high 3 - 4 hours. Serve with biscuits.

Slow Cooker Carnitas

Slow Cooker Carnitas


INGREDIENTS


4-5lb pound boneless pork butt/shoulder, cut into six equal pieces
2 teaspoons salt
1 teaspoon pepper
1 tablespoon oregano
1 tablespoon cumin
8 cloves garlic, crushed
1 medium onion, quartered
3 bay leaves
1 lime, juiced
1 large orange, juiced (save the spent halves)
Optional Toppings
Corn tortillas
Rice
Black beans
Salsa
Guacamole
Pineapple
Sour cream
Cilantro
Cheese

PREPARATION

1. In a slow cooker, add cut pork, salt, pepper, oregano, cumin, garlic, onion, bay leaves, and lime juice. Juice the orange and add it to the cooker as well. Mix together until the meat is well-coated. 
2. Cover and cook on low for 8-10 hours, or until the meat pulls apart easily. 
3. Remove the pork and transfer to a foil-lined baking sheet. Shred the pork and spread across the baking sheet in a single layer. 
4. Pour about 1 cup of the liquid remaining in the slow cooker over the shredded pork. Broil for 5-10 minutes until the meat browns and crisps along the edges. 
5. Serve immediately. Great as a filling in tacos, burritos, salads, or nachos! 

LABEL (12): Slow Cooker Carnitas. Cook on LOW in crockpot for 8-10 hours, until pork easily shreds. Remove pork, shred, and place on foil lined baking sheet  top with 1c of liquid  and broil 5-10 minutes. Warm corn tortillas for 30 seconds. Optional toppings - cilantro, onion, cheese, pineapple, avocado, lime juice.


Crockpot Mango Chicken

4 boneless, skinless chicken breasts
2 cups tomato based mango salsa- i use the one with peach from Costco
2/3 cup brown sugar
1 TBSP salt

Label (12); Bethany's Crockpot Mango Chicken: Put all ingredients in the crockpot on low for 8-10 hours or high for 4-6.  Shred chicken.  Use in tacos, burritos, enchiladas, nachos, etc.   

This turns out so tender and flavorful. Serve with rice, black beans, pico de gallo,  & Cafe Rio ranch dressing to make tacos, nachos, enchiladas or even a wonderful salad. ENJOY!
Kalua Pork


Ingredients:

3-4 lbs Pork Shoulder Boneless
2 Tbsp Liquid Smoke
2 Tbsp Sea Salt


Rub pork with liquid smoke and salt all over. Enclose in aluminum foil and bake at 275 for 4-5 hours. Do not open foil to peek. Remove from oven. Open foil and shred with 2 forks. Can remove fat if desired. Serve over cabbage if desired.

Label (12) : Kalua Pork Place liquid smoke in baking dish, put meat in and rub in salt, cover with foil. Cook at 275 for 4-5 hours with out lifting foil. Remove from oven, open foil and remove fat then shred. Enjoy 8-5-10
BBQ Chicken Sandwiches

1 cup BBQ
1/4 cup Italian dressing
1/4 cup brown sugar
2 tbsp worcestershire sauce
4-6 chicken breasts
hamberger buns
frozen sweet potato fries

Place all ingredients in crockpot and cook on low 6-8 hours or on high 4-6 hours. Shred chicken and return it to the crockpot stir it up and pile it onto the buns (you can toast the buns if you'd like).

Bake the sweet potato fries in the oven (follow the directions on the bag).
